  • Kolkata: The Kolkata Municipal Corporation (KMC) has revoked the notice suspending the licence of Roots, a popular rooftop resto-bar near Exide on Chowringhee, making it the first among 60-odd restaurants and establishments that had been served similar notices to officially get a clean chit from the civic body to resume business.

According to KMC, the suspension notice was revoked on the basis of documents submitted by the restaurant. Restaurant owner Ramesh Kumar Agarwal said the restaurant had filed an application for resumption of business along with results of tests on its food samples that had been carried out at an accredited laboratory. Restaurants’ bodies have advised member-restaurants that were asked to suspend business, to ‘clean up and ensure that proper hygienic measures as per the FSSAI guidelines have been initiated’ before they apply for reopening.

While one of the restaurants shut down during the recent inspections have applied for reopening after their food samples passed checks, the rest have been asked to be cautious. The National Restaurants’ Association of India (NRAI) has asked its members to alter faulty packing of raw, frozen and cooked food. “We have asked restaurants to store raw vegetables and meat in food-grade containers or open steel containers and shun plastic bags. There is yet no evidence from lab tests about any stale meat being stored in a Kolkata restaurant,” said Sagar Daryani, national president of NRAI.

The body has also asked members to attend the Food and Safety Training & Certification (FOSTAC) sessions for food supervisors across restaurants in the city. Each eatery needs to have a FOSTAC trained employee for every 25 food handlers.

The Hotel and Restaurants’ Association of Eastern India (HRAEI) has urged its members to ensure that raw vegetables and meat are washed, cleaned and then stored in permitted containers. “Labelling is must to ensure that food purchased or cooked earlier is served first,” said Sudesh Poddar, president of HRAEI.
